Allicin which is a sulfur compound is produced when crushing or chewing fresh garlic, which then produces other sulfur compounds including: ajoene, allyl sulfides, and vinyldithiins.
KEYNOTE about Garlic:
Garlic should be raw and freshly cut open in order for it to work it's magic. Leaving it exposed to air or cooking destroys the active ingredient. The rawer the better when it comes to alliums. The garlic soup is good, but with the garlic being cooked to death, the benefits come mainly from the ginger and cayenne. Leave the garlic raw, or only slightly boiled in the soup. Also, adding a tiny bit of turmeric makes it even healthier.
OPTIONAL METHOD:
You can boil organic chicken broth and add 4 bulbs of garlic – peel and chop into small pieces after the broth boils and add the garlic. Immediately turn off the heat let it sit for 5 min before serving. This can be a very powerful combination!
